preparation
Put rice in a saucepan with cold water, wash thoroughly, drain and drain on a sieve. Bring rice to the boil with 1 3/4 times the amount of fresh water and let it soak for 10 minutes on a low flame. Remove from the stove and let it soak for another 10 minutes. Process according to the recipe or season for sushi rice.
