The plant from which Asafoetida is derived is called Asant or Devil's Dung and grows in an area extending from Iran through Afghanistan and Russia to western Pakistan. The Asant grows up to three meters tall and belongs to the family of umbel flowers (such as caraway, for example). The resin Asafoetida is extracted from the milky sap of the thick taproot. To do this, the root is scratched, the sap is collected over several months and dried in the sun. One plant can yield up to 1 kg of resin during one harvest.
Use
Asafoetida is added sparingly when cooking dal and curry dishes, sauces and soups to increase the digestibility and flavor of the food according to Ayurveda. It is also used as a substitute for onions and garlic. It is also an ingredient in Worcestershire sauce.
