Tibetan Sonam Dölma has been making her traditional staple food Tsampa for her personal use for years together with her mother, until she decided to produce it for interested non-Tibetans. This was mainly because many Westerners who had spent time in the Himalayas or Tibet raved about Tsampa upon their return. Others read about this staple food so popular among Tibetans in books about Tibet and wanted to try it themselves. So Sonam Dölma decided to produce Tsampa.
The actual production was preceded by numerous trials, because the quality of Tsampa depends on many factors: the type of barley, the amount of roasted grain, the temperature and even the temperature progression during roasting, the grinding method, etc.) And even today, when production has settled into a routine, regular inspections take place to guarantee that Sonam's Tsampa is authentic, that is, genuinely Tibetan.

Application
