Note for summer:

At higher temperatures, the oil in the cream becomes liquid and floats to the top. This is a normal process; it doesn't mean the food has spoiled. To prevent this, you can store the cream in the refrigerator during the summer. Alternatively, simply stir it with a knife before use.
