Tsukemono refers to vegetables in Japan that are pickled in salt or sauces and eaten as a side dish with main meals or as a snack with beer.
With the Japanese salad press (Tsukemonoki), you can quickly, easily and hygienically ferment your own fruits and vegetables.
The strong spring action of the Tsukemonoki continuously presses the vegetables together as they release their liquid naturally.

Instructions
Clean the vegetables or fruits and peel if necessary. Cut softer varieties such as cucumber and mango into thick slices, and slice firm vegetables such as carrots and radish as thinly as possible.
For 1.5 kg of vegetables, add approximately 15 grams of salt.
Layer everything in the Tsukemonoki, lightly salting each layer. Screw the Tsukemonoki lid onto the base.
After no more than one hour, the vegetables should be covered with the extracted juice. After two hours, you can use the pickled vegetables as quick Tsukemono.
