    Cashew-Petersilien-Creme mit Limette & Ingwer

    Cashew-Parsley Cream with Lime & Ginger

    This fresh, creamy herb sauce combines nourishing cashews with smooth parsley, warming ginger, and a hint of lime – a wonderfully versatile dip for bowls, curries, vegetable dishes, or as a spread. Cooling, digestion-promoting, and full of flavor.

    Ingredients (for approximately 4 servings)

    Cream Base:

    ½ cup cashew nuts (chopped, approximately 60 g) or 4 tsp cashew butter
    2 cups fresh flat parsley, finely chopped
    ¼ tbsp fresh ginger, peeled & finely chopped
    ½ tsp mustard seeds
    2 tbsp whole cane sugar or date sweetness
    2 tbsp lime juice (freshly squeezed)
    2 tbsp yogurt (3.5%, optionally plant-based)
    ½ tsp mineral salt
    as needed cayenne pepper (optional for heat)

    Preparation (approximately 10 minutes)

    Prepare mustard seeds (optional): For those who prefer, you can dry roast the mustard seeds beforehand until they pop – this intensifies the flavor.
    Blend all ingredients: Put cashews (or cashew butter), parsley, ginger, lime juice, yogurt, sugar, salt, and mustard seeds into a blender and puree into a smooth cream.
    Season to taste: Season with cayenne pepper as desired. Transfer to a small bowl and serve immediately or refrigerate.

    Best Time of Day: Perfect at midday or as a side to dinner.

    Constitution: Harmonizes Vata and Pitta – cashew & lime nourish and cool; for Kapha with heaviness, better prepared without yogurt.

    Tip: Particularly delicious with roasted vegetables, kitchari, as a bread spread, or as a dressing base for salads.
