    Fruchtige Kartoffelsuppe mit Aprikose, Apfel & Kokos

    Fruity Potato Soup with Apricot, Apple & Coconut

    This creamy soup combines the grounding power of potatoes with fruity lightness – ideal for cooler days or emotional balance. Tamarind, apricots and coconut milk provide depth and exotic freshness.

    Ingredients (for 4 servings)

    Base:

    700 g starchy potatoes
    2 shallots
    1 garlic clove
    2 cm fresh ginger
    2 apples
    100 g dried mountain apricots
    1 stalk lemongrass
    ½ chili pepper (deseeded)
    600 ml vegetable broth
    400 ml unsweetened coconut milk

    Spices:

    3 tbsp ghee
    1 tsp turmeric
    1 tsp cumin (coarsely ground)
    1 tsp ajwain (coarsely ground)
    1 tbsp tamarind paste

    To Finish:

    2 tbsp lime juice
    to taste salt & pepper
    to taste fresh parsley or cilantro for garnish

    Instructions (approx. 35 minutes)

    Preparation: Peel potatoes and cut into rough chunks. Finely chop shallots, garlic and ginger. Dice apples, soak apricots in 1–2 tbsp water & lime juice and simmer gently.
    Toast spices: Heat ghee in a pot and toast turmeric, cumin and ajwain. Briefly toast potatoes, shallots and garlic with the spices.
    Deglaze: Add tamarind paste and deglaze with vegetable broth and coconut milk. Score lemongrass lengthwise, tie together and cook with the soup.
    Simmer: After 10 minutes, add the deseeded chili pepper. Simmer for another 20 minutes.
    Blend: Remove lemongrass and chili, finely blend soup (optionally replace afterward).
    Incorporate fruit: Sauté apple pieces in a little ghee. Fold together with the soaked apricots into the soup.
    Season: Season with salt, pepper and lime juice. Serve with fresh cilantro or parsley.

    Ayurveda Tips:

    Best time of day: Ideal in the evening or in autumn weather – warming & calming.

    Constitution: Particularly suitable for Vata and Pitta types – sweet, soft and easily digestible. Kapha types should use less ghee & coconut milk, optionally replacing apricots with a little lemon.

    Spice tip: Ajwain supports digestion, tamarind brings a mild pungency to the sweet base and stimulates Agni.
