    Warm Kitchari with Root Vegetables & Ghee

    This recipe combines our beloved Miraherba Kitchari Basic Mix with seasonal root vegetables, ghee, and fresh cilantro. It nourishes, calms, and detoxifies – and is quick and easy to prepare. Ideal for cleanse days, everyday cooking, or simply feeling good in your belly.

    Ingredients (for 2 servings)

    Base:

    120 g Miraherba Kitchari Basic
    250 ml water
    1 small carrot
    1 small parsnip
    1 smallzucchini
    2 tbsp ghee
    as needed salt

    For Refinement:

    ½ tsp asafoetida (as needed, at end of cooking)
    as neededfresh cilantro or parsley
    1 splash lemon juice

    Instructions (about 25 minutes)

    Prepare vegetables: Wash vegetables and cut into small cubes.
    Bring kitchari to boil: Bring Kitchari Basic Mix and water to a boil in a small pot.
    Add vegetables: Add the prepared vegetables and simmer over low heat for about 15 minutes. Stir occasionally.
    Refine: Toward the end of cooking, stir in asafoetida and ghee. Season with salt and lemon juice.
    Serve: Divide into bowls and garnish with fresh herbs.
    Tip: For creamier texture, stir in a splash of coconut milk or a spoon of almond butter.

    Best time to enjoy: Optimal for lunch or as a light dinner.

    Constitution: Balancing for all three Doshas – gently warming for Vata, not too spicy for Pitta, easily digestible for Kapha.

    Spice tip: Asafoetida promotes Agni and prevents bloating – especially helpful for Vata issues.
