    Cauliflower in Coconut Shells

    A fragrant and spiced dish where tender steamed cauliflower bathes in an aromatic spiced broth and is wrapped in juicy coconut flakes. Inspired by South Indian flavors, warming, grounding, and sattvic.

    Ingredients (for 4 servings)

    Base:

    1 head of cauliflower
    100 g shredded coconut
    ¼ l coconut water

    Spices & Aroma:

    3 cm fresh ginger (finely diced)
    1 tbsp Ghee
    1 tsp cumin (whole)
    10 fresh curry leaves
    5 cloves
    ½ tsp coarsely ground coriander
    1 tsp turmeric (ground)
    ½ tsp Garam Masala

    To Taste:

    1 tbsp lime juice
    as needed salt

    Preparation (approx. 30 minutes)

    Prepare coconut: Soak shredded coconut with a little water and lime juice in a bowl.
    Prepare cauliflower: Cut cauliflower into small florets, rinse thoroughly.
    Toast spices: Heat Ghee in a large pot. Briefly toast cumin, curry leaves, and cloves in it.
    Create aromatic base: Add ginger, coriander, and turmeric, sauté while stirring until golden yellow.
    Cook cauliflower: Deglaze with coconut water, add cauliflower and simmer covered for about 15 minutes until tender-crisp.
    Season to taste: Season with Garam Masala and salt.
    Serve: Just before serving, fold in the soaked coconut flakes. Enjoy warm. Tastes wonderful with basmati rice or Chapati.

    Ayurveda Tips:

    Best time of day: Ideal for lunch, when the digestive fire (Agni) is strong.

    Constitution: For Vata, the cauliflower combined with Ghee, coconut, and warming spices is very balancing—ideally the vegetable is cooked a little longer. Pitta types benefit from the cooling effect of coconut water and mild flavors; if desired, hot chili can be omitted. For Kapha, the dish is well tolerated in smaller portions—additionally, stimulating spices such as cumin and coriander can be enhanced to support metabolism.

    Effect: Warming, balancing, and mildly detoxifying through cauliflower and coconut.
